Venice has a time-honoured gastronomic tradition based on fish from its lagoon and its surrounding seas, vegetables from the gardens of Sant’Erasmo, Burano, Cavallino and Chioggia, and the migratory wildlife that stops or winters over in the lagoon. This close relationship with its environment has also been augmented over the centuries by influences arising from Venice’s constant contact and trade with peoples and cultures from the Far East and throughout the Mediterranean.

In order to assist the unhurried guest who wants to discover the surprising variety of typical products and the most authentic traditions of Venetian cuisine – which at times also means masterly creativity – a group of restaurateurs has founded the Associazione dei Ristoranti della Buona Accoglienza, where the love of fine food is always combined with a friendly, welcoming atmosphere.

Members of the association are committed to:

- Always specifying the exact type of product used
- Providing a qualified selection of extra virgin olive oils, vinegars and cheeses
- Having a select, balanced wine list in relation to the characteristics of the restaurant
- Ensuring the utmost transparency of prices
- Respecting a proper price/quality ratio
