Sea
bass al cartoccio (in a paper case)

Ingredients (serves 6)
1 sea bass, about 1.5 kg.
6 large prawns, to be shelled, well washed
24 fresh clams, well washed
24 mussels, well washed
24 cherry tomatoes
extra virgin olive oil
salt
freshly ground white pepper
Preparazione
Lightly butter the oven paper in a dish, put in the sea bass and surround
it with the scampi, clams, mussels and cherry tomatoes. Season with a
little extra virgin olive oil, salt and pepper, then fold over and seal
the paper well and bake for about 40 minutes at a temperature of 200°-220°
C°.
Remove from the oven, arrange on a serving dish and serve up the contents
of the case.
