Dory fillets with aromatic herbs
Osteria alle Testiere
Ingredients (serves 6)
6 John Dory fillets, 130 gm. each
juice of 1½ lemons
juice of 3 oranges
a mixture of aromatic herbs consisting of: 3 leaves of basil, 6 of sage,
8 of chives, 6 of thyme, 3 sprigs of dill, 3 of tarragon, 3 of marjoram,
3 of peppermint, 1 of rosemary, 3 of citronella, 2 of fennel, 5 cardamom
pods, 3 pieces of star anis, 1½ spoons of pink pepper in brine.
extravirgin olive oil, salt, pepper, garlic
3 strawberries
6 blackberries
6 raspberries
Preparation
Lightly sauté the garlic in a pan then add the John Dory fillets,
salt and pepper. Cover the fillets with the aromatic herbs, lemon and
orange juice. Cook covered over a low heat for 5 minutes, adding a little
water if necessary. Remove the fillets, reduce the sauce, add the berries
and pour over the fish on the serving dish.
