Sardines

Ingrediens (serves 6 persons)
12 sardines
400 gm. sliced onions
60 gm. decolourised white vinegar
a little flour
200 gm. extra virgin olive oil
80 gm. raisins
80 gm. pine nuts
40 gm. diced candied citron
salt – white pepper to taste
Preparation
Sauté the onion lightly in oil without browning. When half cooked,
add the vinegar, salt and pepper. Continue cooking for about 40 minutes
in total. Normally the onions are ready when the liquid has evaporated.
Open out the sardines book fashion, remove the bones, dust with flour
and fry in plenty of oil.
Arrange the sardines in alternate layers with the hot onion, adding the
raisins, pine nuts and citron. Leave at least 24 hours before eating;
keeps well in the fridge.
