Spaghetti with fresh clams

Ingredients (serves 6)
500 gm. fresh clams
2 or 3 cloves of garlic
parsley
olive oil
white wine
500 gm. spaghetti


Preparation
Soak the clams in salted water and knock them to identify any containing sand. Put them in a large pan with the garlic and a little olive oil over a fast heat. Cover and stir every now and then until open, then add the dry white wine and let it evaporate.

Cook the spaghetti al dente in plenty of salted water, drain well and add to the pan. Combine quickly adding plenty of parsley and a little oil. Serve at the table.
