Spider
crab tagliolini

Ingredients (serves 6)
3 spider crabs
2 cloves of garlic
extra virgin olive oil
400 gm. cherry tomatoes
dry chili
500 gm. tagliolini
Preparation
Clean and wash 3 medium spider crabs and boil them in salted water for
about 20 minutes. When cool, remove the claws and separate the flesh from
the shell, throwing away the tough and brittle parts.
Lightly sauté the garlic and parsley in a sufficiently large pan
with olive oil. When browned, put in the crab and its coral for a few
minutes, then add a glass of white wine and reduce. Finally, add some
halved cherry tomatoes and a pinch of chili. In the meantime, cook 500
gm. of tagliolini in plenty of boiling water. Add the cooked pasta to
the sauce and toss together.
